Carob: Ancient Sicilian Fruits

Carob beans are the fruits of the Ceratonia siliqua commonly called carob tree, an evergreen plant belonging to the legume family.
The word carob in Arabic means carat, it was probably used as a unit of measurement for gold.

In ancient times, it was a sustenance for men thanks to its energetic power.
Also called St. John's Bread because it is said that the Saint fed on this fruit during his long periods of meditation in the desert.
Our grandparents used them as feed for livestock, today this fruit has been rediscovered and appreciated for its notable benefits such as: astringent, slimming, energizing, rich in fiber and low in fat, they are also gluten-free, ideal for those suffering from celiac disease.
With an unmistakable cocoa flavour, they are a substitute for cocoa powder.
For several years the food industry has shown interest in carob, as it uses the pulp to obtain cocoa which is the flour obtained by drying the pulp, while by grinding the seeds you obtain a thickening gum widely used in pastry making.

It is not very easy to find carob, since it is a forgotten fruit originally from Syria and today it is only present in a few areas of southern Italy such as: Sicily, Sardinia, Puglia.
