We Present Our Cultivar
Biancolilla olive oil comes from Sicilian olive cultivars. This cultivar is considered one of the oldest Sicilian olive varieties.
Grown mainly in the provinces of Western Sicily between Palermo and Agrigento (where it is most present, approximately 90%); the Biancolilla cultivar is very resistant and suitable for the arid soils typical of Sicily.
The olive is oval and has a beautiful pistachio green colour which lightens towards white during the veraison (ripening) period.
It is important to know that lilac oil is the light fruity par excellence.
Some Peculiarities:
It is considered very valuable, delicate on the palate, balanced, quite fluid, light green in colour immediately after milling and straw yellow with vaguely golden shades after a couple of months of decantation.

Slightly spicy and very aromatic, with hints of almond, tomato and artichoke combined with flavours of fresh grass and green olive.
Due to this light fruity characteristic, it is often used to soften intense and spicy oils; oils coming from other cultivars and for this very reason it is often found in blends with other oils.
