The Cedar also called “Piretto” in Sicilian dialect

The citron is a very ancient citrus fruit and is cultivated in only a few areas of the world.
In Italy, production is concentrated mainly in the northern part of Calabria in the famous cedar riviera.
Thanks to the favorable climatic conditions, this citrus fruit that evokes the lemon is also produced on our beloved island . The harvest takes place twice a year: in October when the fruit is still unripe to make candied fruit, while between December and February for the raw consumption of the ripe fruit.
It has a very thick peel and very little pulp and therefore little juice, it has an oval shape and is twice the size of a lemon.
This citrus fruit gives off an intense scent as it is rich in essential oils present in the peel and from here a digestive and relaxing cedar oil is obtained.
It has a sour taste with bitter notes, rich in vitamin C which helps to strengthen the immune system.
This citrus fruit is a bit underestimated in the kitchen due to its particular characteristics, but in reality it can be used in different ways.
It can be squeezed like a simple citrus fruit and drink the fresh and intense juice, the pulp can be used to make jams and tarts and finally also the peel ideal for flavoring first courses and also widely used in pastry making to make candied fruit.
