Apricot, Summer Delight!
The apricot is the fruit of the apricot tree, an arboreal plant, which belongs to the Rosaceae family, the same as plums, peaches and cherries. Originally from China and then spread throughout Europe at the time of the Romans. It is a typical summer fruit, given that it ripens from May to the end of July and is harvested mainly by hand.
CHARACTERISTICS OF THIS FRUIT:
Firm, fragrant pulp, with a sweet-sour flavour. It has a yellow-orange colour depending on the variety and a slightly velvety skin. It has a single ovoid-shaped seed that resembles an almond.
CONSERVATION:
Fresh and ripe apricots can be stored in the refrigerator in a plastic container. Slightly unripe apricots can be placed in a bag at room temperature for 2-3 days and then in the refrigerator, in order to ripen them.
VARIOUS BENEFICIAL PROPERTIES:
The first beneficial effect of apricots on the body is undoubtedly linked to their ability to reduce "bad cholesterol", while simultaneously increasing the levels of good cholesterol: in this way they carry out a protective action for the heart.
Apricot is rich in important minerals such as potassium, magnesium, phosphorus, iron and calcium, making it an essential food for those who are anemic and exhausted.
It also contains “vitamin A” which is useful for the skin as it stimulates the production of melanin.
Ideal for celiacs if consumed fresh as it is gluten-free.
KITCHEN USES:
Apricots are usually used in various types of sweet preparations such as: ice cream, sorbets, semifreddos, cakes, jams, jellies, juices and syrups.
However, their slightly acidic taste also makes them suitable for savoury combinations such as sauces to accompany red meats.
They are also used in liquor making to make spirits.
